Aromatic Spanish Rice


  • 1 cup long grain rice or Thai jasmine rice
  • 2 cups vegetable broth
  • 1 can tomato sauce
  • 2 Tbsp. black beans
  • 2 jalapeno peppers diced
  • 2 Tbsps. fresh coriander/cilantro
  • 2 Tbsps. green onions chopped
  • 2 cloves fresh garlic minced
  • 2 Tbsps. green pepper chopped
  • 1/2 red onion chopped
  • Salt as needed
  • 2 Tbsps. butter or olive oil


Rinse and drain rice. Sauté rice with a tsp. of oil in a pot. Add chopped onions first, sauté for a few minutes until they becomes translucent. Now add all the other vegetables and sauté for an addtional 5 minutes.

Take a pot and cook the rice along with the vegetable broth and tomato sauce. Bring to a boil. Then let the pot of rice cook on low heat until done. Garnish with the chopped cilantro.
