Aromatic Spanish Rice
Ingredients:
- 1 cup long grain rice or Thai jasmine rice
- 2 cups vegetable broth
- 1 can tomato sauce
- 2 Tbsp. black beans
- 2 jalapeno peppers diced
- 2 Tbsps. fresh coriander/cilantro
- 2 Tbsps. green onions chopped
- 2 cloves fresh garlic minced
- 2 Tbsps. green pepper chopped
- 1/2 red onion chopped
- Salt as needed
- 2 Tbsps. butter or olive oil
Method:
Rinse and drain rice. Sauté rice with a tsp. of oil in a pot. Add chopped onions first, sauté for a few minutes until they becomes translucent. Now add all the other vegetables and sauté for an addtional 5 minutes.
Take a pot and cook the rice along with the vegetable broth and tomato sauce. Bring to a boil. Then let the pot of rice cook on low heat until done. Garnish with the chopped cilantro.
