Aval Kesari

Aval Kesari - a simple yet delicious dessert with puffed rice


  • 1 cup puffed rice
  • 1/4 cup clarified butter (ghee)
  • 1/2 cup granulated sugar
  • 1/4 water
  • 1 tsp. orange coloring (if desired)
  • 1 tsp. powdered cardamom
  • 6 almonds broken into small pieces or halves (roast in ghee until brown)


  • Roast aval (puffed rice) in a flat pan or wok with 1/2 a Tbsp. of ghee
  • Add water and cook the aval. Should take about 5 minutes
  • Add sugar and let it dissolve into the contents
  • Add food coloring and ghee
  • Mix everything well while stirring so the contents don't stick to pan
  • Finally, sprinkle cardamom and mix
