Cucumber Raita
Pointer: Baby cucumbers are the best for this raita.
Ingredients:
- 4 baby cucumbers, shredded or chopped fine
- 1 medium-sized tomato, diced
- 2 cups non-tart yogurt
- 2 tsps. salt
- Cumin powder, freshly toasted and powdered
- 2 tsps. cayenne pepper powder
- 2 Tbsps. fresh coriander, chopped
- 1/2 a medium sized onion, diced
Method:
Mix the above ingredients in a bowl. Add some cold water if the mix is too thick. Transfer to a serving dish. Serve with Indian breads or any Indian dish.
Cucumber raita is a great addition to any dish, south or north Indian.
