Scalloped Potatoes with four cheeses - a great side dish for Thanksgiving
This heat and serve dish was promoted by Trader Joe's. Won't it be even better if made at home!
Ingredients:
- 1/2 pound potatoes (use thin-skinned potatoes for this recipe
- 2 cups of shredded Quattro formaggio (blend of asiago, fontina, parmesa, mild provolone
- 1/2 stick unsalted butter
- 2 tsps. paprika
- 1/2 Tbsp. fresh ground pepper
- Salt to taste
Method:
Skin potatoes and slice them horizontally into circular/oval shapes. Let the thickness be at least a quarter inch. Spread slices on a baking dish. Slice some butter on top of every layer. You may not want to use any salt as the cheeses have enough.
Mix the cheeses and spread over each layer. Sprinkle paprika on top and bake in a 400 degree oven until the potatoes are done. Let the top layer turn golden brown. This will be a great side dish for Thanksgiving. Add fresh crushed pepper as needed for each serving. Enjoy! |
