Kale Curry, southern Indian style

Pointer 1: Fresh Kale. Many of the wholesale stores carry them already cleaned and cut ready to go.

Ingredients:

  • 1 lb.bag of kale
  • 2 to 3 dried red chillies
  • 1/2 cup shredded coconut
  • 1 Tbsp. urad dhal
  • 1 Tbsp. canola oil


Method:

Chop the kale into small shreds. Wash and rinse thoroughly although the packaged ones are ready to go. Drain the water completely.

Take a large wok. Add the oil. When hot, roast the red chillies and urad dhal. Add the drained kale. Do not cover. Let the water evaporate. Kale does not take long to go. Once the water has completely evaporated, add the shredded coconut.

There is no need to add salt.
