• 1 long gourd (calabash) also known as long squash
  • 1 cup paneer
  • 2 Tbsp minced fresh coriander
  • 2 tsps cumin powder
  • 2 tsps coriander powder
  • 1/4 tsp. mango powder
  • 1 tsp garam masala
  • 1 tsp red chili powder
  • 1 Tbsp. gram flour
  • Oil for frying
  • 1/4 teaspoon salt


Skin and shred the gourd. Squeeze out the water gently. Mix all the ingredients with the gourd except for the gram flour. Finally add the flour and form small lemon size balls. Flour is the binding agent, so add as needed but a light coating will do.

Heat oil in a deep pan for about 3 mins. Drop the kofta balls into the oil and fry them on medium heat until they turn light brown.
