Meatless French Onion Soup

Pointer 1: Regular yellow or red onions.

Ingredients:

  • 4-5 onions
  • 2 cloves garlic
  • 1 bay leaf
  • 8 cups vegetable stock
  • 1/2 cup white wine
  • 1/4 cup corn flour
  • 1 bay leaf
  • Few slices French bread
  • Gruyere cheese
  • Parmesan cheese
  • 1 Tbsp. canola or olive oil
  • Salt to taste


Method:

Slice onions into slim pieces. Sauté until in oil golden brown. Mash the garlic and add to the pan. Continue sauté-ing until garlic turns light brown.

Add the stock, wine and bay leaf. Let everything come to a boil. Cover with a lid and continue cooking on low heat. Remove the bay leaf. Add the corn flour mixed with a little bit of water if necessary.

Pour soup into small bowls that can be placed in the oven. Toast the French bread slices. Place one on each bowl. Top with a light coating of butter. Spray the cheese, grated on top. Let it bake in the oven at 350 degrees until the cheese melts and turns light brown.
