Mediterranean Burgers

Ingredients for Patties:

  • 2 cups fresh baby spinach
  • 1 cup garbanzo beans, coarsely mashed
  • 2 tsps. onion powder
  • 2 tsps. garlic powder
  • Olive oil to toast the burger
  • 1 Egg white to coat patties
  • Plain or garlic and basil flavored bread crumbs
  • 1 1/2 tsps. salt

Topping:

  • 1/2 yellow onion chopped
  • 4 cloves, garlic
  • 2 tsps. fresh chillie flakes
  • 1 fresh tomato, chopped
  • Fresh Parmigiano-Reggiano cheese
  • 1 tsp. salt


Method:

Sauté spinach in olive oil for a few minutes until the wilt. Combine the rest of the ingredients except for egg white and bread crumbs. Make small lemon- sized balls. Set aside.

Flatten out lemon sized balls into patties. Coat both sides of patti with egg white and then roll on bread crumbs.

Sauté onions, garlic first. Then add tomatoes and salt. Continue to sauté until they are cooked well.

Add breaded patties to warm skillet. Toast them until they are brown on both sides. Next warm burger buns on skillet. Top on half of bun with pattie, spread the garlic, onion, tomato topping and shredded cheese. Top with the other half of the bun. Bite into it. Enjoy.
