Mushrooms Stuffed with Kale, Broccoli and Cheese

Monk's Vegetarian Curry


  • 1 big green pepper
  • 1/2 cup cauliflower florets
  • 1/2 broccoli florets
  • 1/2 cup sliced carrots
  • 1/2 cup coconut milk (unsweetened)
  • 1/4 cup curry powder or curry paste
  • 2 Tbsp. fresh chopped cilantro
  • Juice of 1 lemon
  • Oil or ghee, or a mix of both to roast the curry powder
  • Salt to taste


Take a wok or flat pan. Add ghee and roast the curry powder. Add all the cut vegetables and mix them well with the roasted powder. Let the vegetables cook until they are done.

Pour the coconut milk and cook covered for 5 minutes. Finally add the lemong juice and salt. Garnish with coriander leaves.
