MushroomAsparagusTofu Salad

Mushroom-Asparagus-Tofu Stir Fry

Pointer 1: Firm tofu, fresh asparagus and shiitake mushrooms.


  • 2 cups shiitake mushrooms
  • 10 asparagus, cut into 1 1/2" length
  • 4 scallions, chopped
  • Cubed Tofu
  • 4 cloves garlic, minced
  • 1 Tbsp. soy sauce
  • 2 tsps. toasted white or black sesame seeds
  • 2 Tbsps. sesame oil


In a hot pan, add 1 Tbsp. sesame oil and sauté the mushrooms until the water evaporates. Set aside. Oven-bake the tofu in a 390 degree temperature until it reduces just a bit, and becomes dry.

Lightly blanche asparagus (4 minutes) after trimming the hard edges. Use another Tbsp. of oil, add the garlic first and then the asparagus. Sauté for a few couple minutes. The asparagus should maintain the color and stay crisp.

Mix everything in a bowl, add the scallions, sesame and soy sauce. Toss season with fresh ground black pepper and serve.
