Oven Roasted Peppers

Pointer 1: Buying fresh peppers in bulk is a good way to start this recipe.


  • 2 pound mixed peppers in a bag (red, orange, yellow)
  • Olive oil
  • 6 cloves garlic diced
  • 2 tsp. fresh cracked pepper
  • 2 tsp. dried rosemary
  • Salt to taste

Wash peppers. You may leave the stalk or remove them. Spread on a flat, wide dish. Sprinkle generous amounts of olive oil to cover the peppers. Add the diced garlic. Mix well.

Roast in oven at 375 degrees. Do not cover the dish. Sprinkle rosemary, pepper and a touch of salt. Continue baking in oven until you see the peppers start to shrivel up and roasted.

Works great as a side dish or in vegetable burgers
