Pasta with sautéd veggies in garlic and olive oil
Ingredients:
- 1 cup fusili pasta, a mix of colors
- 1 cup Broccoli florets
- 1 cup mix of peppers cut lengthwise
- 1 medium-sized white onion, slivered
- 1/3 cup walnuts, lightly toasted
- 2 Tbsps. grated Parmigiano-Reggiano cheese
- 1 tsp. thyme flakes
- 2 tsps. chillie/garlic flakes or just garlic
- Olive oil
- Salt to taste
Method:
Follow directions on package and cook pasta..
Saute vegetables in olive oil. Toss into bowl, add pasta, thyme flakes, chillie-garlic flakes. Top with toasted walnuts and cheese. Enjoy.
This recipe allows for much creativity. Adding freshly roasted garlic; oregano flakes, red sauce and other varieties of vegetables are some of the options.
