Peppers in Dhal
A mix of fresh peppers of all colors. This is a good dhal to prepare if you don't have onions or garlic.
Ingredients:
- 1/4 pound mix bag of peppers, chopped
- 1 cup of Moong lentil or a mix of lentils
- 1 tsp. cumin seeds
- 1 tsp. turmeric powder
- 1 tomato diced
- 2 green chillies
- 2 tsps. lime juice
- 1 Tbsp. canola oil
- 2 Tbsps. chopped fresh coriander
- Salt to taste
Method:
Cook lentils separately with the turmeric.
In a pan add canola oil and cumin, roast till it turns golden brown. Add the chillies first, after a minute add the tomatoes and peppers. Sauté until the peppers are cooked. Add the cooked dhal and let everything cook for 8 to 10 minutes on medium-low heat and add the lime juice. Mix well and bring to a boil. Turn off heat. Sprinkle the coriander on top.
Serve with rice or roti.
