Pumpkin Soup
Pointer: Find the right pumpkin not the ones grown for halloween displays. Buttercup pumpkins are the best for cooking.
Ingredients:
- 3 cups, sliced pumpkins
- 2 cups, vegetable broth
- 2 cloves garlic
- 1/2 medium-sized onion, chopped
- 1 Tbsp. parsley
- Dollop of cream for each soup bowl (optional)
- Crushed peppercorns
- 1 Tbsp. Olive or canola oil
- Salt to taste
Method:
Cook pumpkins in a large pot with a cup of water for 10 minutes. Sauté onions and garlic in a pan for 6 minutes. Blend cooked pumpkins, onion and garlic in blender. Add salt to taste. Add vegetable broth to the pot. Return back to stove and cook until it comes to a boil. Cook another 5 minutes in medium heat.
Serve in bowl. Add a touch of cream and parsley on each bowl. Sprinkle black pepper as needed.
