Quinoa Pasta
Pointer 1: Whole Foods is the only place I have found quinoa pasta at; with sauce (use the same sauce recipe from here) made from fresh tomatoes, sautéed kale or spinach and peppers, this preparation tastes fabulous.
Ingredients:
- 2 cups uncooked pasta
- 4 Tbsps. olive oil
- Sauce as needed
- 2 cups fresh kale
- 2 cups fresh spinach
- 1 cup mix of peppers
- 1 cups sliced cherry tomatoes
- Salt to taste
Method:
Cooked pasta per direction on package. Prepare sauce as in this recipe.
Take a wok, add 2 Tbsps. olive oil. Wash and drain the greens. Sauté them in wok until their shrivel. There is no need to blanche them prior. Sauté the peppers the same way. Add the cut cherry tomatoes and continue to sauté until the color of tomatoes turn slightly deep. Make sure the cherry tomatoes are firm.
Add the vegetables to the sauce. Add the remaining olive oil and toss. Serve with sauce over top of a bed of pasta or on the side
