Roasted Cauliflower in Olive and Garlic

Pointer 1: Store bought garlic paste works well too.


  • 1 full head of cauliflower
  • 5 cloves fresh garlic, diced
  • 1/2 cup olive oil
  • 1/4 cup Parmesan cheese
  • 1/4 mozzarella cheese
  • 1 Tbsp. dried rosemary or parsley
  • Salt to taste


Break cauliflower in florets. Use a large baking dish. Mix florets well with olive oil and garlic pieces. Spread the rosemary or parsely over them. Add salt and cheese. Toss well. Layer the top with the cheese as well. Bake at 400 degrees until done. Broil at high heat for another 10 minutes or until the top browns.

Makes an excellent side dish.
