Roasted Potatoes Pesto

Pointer 1: Choose a variety that is not too starchy.


  • 5 medium sized potatoes
  • 2 cloves garlic
  • 1 cup parsley
  • 1/2 cup. virgin olive oil
  • 1/2 mozzarella cheese, shredded
  • 2 tsps. crushed balck pepper
  • Salt to taste

  • Method:

Wash potatoes thoroughly. Cut into cubes, sprinkle olive oil liberally, 2 tsps. salt and bake in 400° oven. Let potatoes turn light to a dark brown outside.

Grind together parsley, cheese, garlic and 1Tbsp. olive oil. Set aside. Spread the parsley over the potatoes. Toss, sprinkle cracked pepper and serve hot.
