Sabji - Mixed Vegetable
Sabji, a mixed vegetable dish

Pointer 1: Preferred vegetables are red onions, potatoes, cauliflower, green pepper, tomatoes, peas and other green vegetables

Ingredients:

  • 1 potato cut (make it any shape you like)
  • 1 green pepper (cut 1” long)
  • 1 tomato (cut 1” long)
  • 5 beans (cut into 1” long)
  • ½ cup green peas
  • ½ an onion (optional)
  • 1 Tbsp. canola or olive oil
  • 1 tsp. turmeric
  • ½ tsp. cumin powder
  • 1 tsp. coriander powder
  • 1 tsp. chili powder
  • 1 tsp. garam masala
  • 1 Tbsp. chopped fresh coriander (cilantro)

You may add other vegetables such as spinach, carrots, eggplant or okra. Broccoli or radish may not go well in this preparation.

Method:

Wash and cut vegetables as indicated. Take a wok. Add oil. Warm, then add the onions.  Sauté the onion for a few minutes or until the rawness disappears. Add the turmeric powder, cumin and coriander powder.  Sauté along with the onions.  Add the chili powder as well. Add the tomatoes. Mix everything well and cook for a couple minutes. 

Now add the beans.  Let it cook for a few minutes.  Then add the potatoes.  After they are both at least half cooked add the remaining vegetables.  After the vegetables are cooked to your taste (some like them just 3/4 cooked, some like them well cooked), add the salt.  At the very end, add the garam masala.  Stir it in and let it remain on the heat for a few additional minutes.  Say about 3-5 minutes. Remove from heat.  Spread the chopped coriander.  Stir and serve with Indian breads.

Serving size approximately 2.
