Garlic and ginger spiced okra
Pointer 1:
Fresh okra, fresh ginger and garlic work best.
Ingredients:
- 1 pound fresh okra
- 4 cloves garlic, diced
- 1" ginger, diced
- 1 red onion, diced
- 1 tsp. turmeric powder
- 2 tsps. cayenne pepper
- 3 Tbsps. chopped coriander
- 1 Tbsp. lime juice
- 2 Tbsps. canola or olive oil
Method:
Take a wide pan. Add oil, let it warm. Add garlic, sauté until they start turning color. Add onions and ginger followed by turmeric and cayenne pepper. Mix well, then add the okra and salt.
Do not cover the pan and continue on medium heat until the okra turns light brown and is cooked.
Finally, add the coriander and serve with the bread of your choice.
