Pumpkin Fillets


  • 1 small pumpkin
  • 1 tsp. black pepper, finely powdered
  • 1/2 tsp, turmeric powder
  • 1/2 tsp. cumin powder
  • 1/2 tsp. chillie powder
  • Ghee for toasting
  • Besan flour to coat
  • Salt to taste


Cut pumpkin into 4 quarters. Peel skin. Remove the seeds. Cut lengthwise into broad slices. Set aside.

Mix the flour with the spices and salt. Keep them dry. Dip the cut slices in hot water for 8 minutes, then drain the water. Keep them slightly wet so the flour will stick. Roll them on the dry, spiced flour.

Take a pan, arrange the pumpkin slices on the pan. Spread ghee around the slices and toast on both sides until crunchy to the touch.
