Vegetable Quesadilla
Pointer 1: Flour or Corn tortilla. Corn tastes better than the white flour tortillas.
Pointer 2: Fresh vegetables
Ingredients:
- 1 large red onion diced
- 2 large tomatoes diced (seeded optional)
- 1 large green pepper diced
- 1/2 cup mushrooms diced
- 1 Tbsp. fresh coriander chopped fine
- Mild Cheddar shredded cheese
- 2 green chillies or Jalapenos seeded, chopped
- Canola oil for sautéing in pan
- 2 tsps. chillie powder
- 1 tsp. cumin powder
- Salt – to taste
Method:
On a flat pan (dosa griddle^), add a tsp. of oil after the pan gets hot. Place a tortilla and let it toast lightly on both sides.
Mix all vegetables and spices together and keep ready in a bowl.
Spread the vegetables over the hot tortilla. Spread cheese over the vegetables. Fold the tortilla and continue to toast until it turns brown on both sides and the cheese inside melts.
Serve with guacamole & salsa.
