Vegetarian Chilli

Pointer 1: Black bean, black-eyed peas, kidney beans, red beans, pinto beans, any or a combination of these is great to make chilli.

Ingredients:

  • 2 cups chilli
  • 1 can of tomato sauce
  • 2 diced fresh tomatoes
  • 2 tsp. red chilli power
  • 2 tsp. cumin powder
  • 1 small onion
  • 1/4 cup of corn kernel
  • 2 vegetarian burger cooked and cut to tiny pieces
  • Salt to taste
  • 1 cup cheddar cheese (optional)
  • 2 tsps. oil to sauté

Method:

Use a wide pot or a wok^.

Heat oil in pot. Sauté the diced onions. Add diced tomatoes. Cook for about 8 mins. Add the cumin, chilli powder and then the tomato sauce. Pour in the mixed beans and corn. Mix, cover and cook for 35 minutes on medium low heat. Finally add the cooked burger. Sprinkle cheese. Mix and serve hot.
