Veggie Burger 1 with Indian Spices

Pointer 1: Use vegetables that blend well with other vegetables. I would definitely avoid corn.

Recommended veggies: Spinach, onion, zucchini, shredded carrots, black beans, chick peas, green chillies, coriander, potato, tomato & green pepper.

Ingredients:

  • 2 cups of a mix of few veggies of your choice finely chopped
  • 1/2 to 1 potato boiled and mashed
  • 1 red onion chopped
  • 4 garlic cloves chopped
  • 2 green chillies
  • 2 Tbsp. fresh coriander chopped
  • 2 tsp. cumin powder
  • 3 tsp. coriander power
  • 1 tsp. garam masala optional
  • 1 egg beaten or subsitute besan (green gram flour paste)
  • Bread crumbs to coat the burgers
  • Oil to cook on skillet if sautéing
  • Your preferred sauces if you are barbecuing
  • Salt to taste

  • Method:

Sauté garlic, onions and chillies first in a Tbsp. of oil. Add the cumin and coriander powder. Mix well. Add all vegetables, cover with lid & cook until done.

Remove from stove. Spread onto a bowl or plate. Add mashed potatoes, coriander, salt, garam masala if you'd like to and finally about 2 Tbsp bread crumbs. Mix well and create lemon sized balls. Coat with more crumbs. Flatten out to patties.

Either grill or sauté. Use good hamburger buns with sesame seeds on top to make your burgers.
