Almond meal dessert - tasty, healthy Diwali treat

Ingredients:

  • 2 cups almond meal (available at Trader Joe's)
  • 11/4 cups sugar
  • 1/4 cup water
  • Pinch of Cardamom powder
  • 2 tablespoons ghee (clear butter)


Method:

Take a heavy wok^. Add water and sugar. Let the sugar dissolve completely. Continue stirring on medium heat until the sugar turns sticky to the touch between your thumb and forefinger. When you separate your fingers the syrup should draw like a thin thread.

Add the almond meal, cardamom and ghee. Keep stirring until you get the consistency of a pancake batter. Remove wok from stove. Pour batter on to a flat, greased pan. Let it cook and cut into squares or rectangles.
