Aviyal (a mixed vegetable with spices and coconut n yogurt, an authentic south indian specialty).
Ingredients:
- 1 cup fresh carrots cut 1 to 1 1/2" long
- 2 Fresh drumsticks cut 1 1/2" long
- 2 cups squash such as zucchini, chayote, indian ash gourd cut
- 5 small eggplants cut lengthwise
- Green beans cut the same size as carrots
- Potatoes, boiled and cut into large cubes
- 1 cup coconut, shredded
- 4 green chillies
- 2 dry red chillies
- 1 Tbspn. cumin seeds
- 2 tsps. mustard
- Few curry leaves
- 3 cups yogurt
- Salt to taste
- 1 Tbsp. fresh coconut oil
Method:
Steam cook all vegetables until they are soft but not mushy or over cooked. Grind to a fine paste, shredded coconut, chillies, cumin and mix them with yogurt. Mix them into the cooked vegetables. Heat over stove for a few minutes. Add salt. Garnish with mustard seeds. Finally add the coconut oil. Add the curry leaves right before serving.
Goes well with white or brown rice.
