Macaroni Broccoli Mushroom Cheese

Broiled macaroni with broccoli, mushroom and a variety of cheeses


  • 4 ounces grated Cheddar
  • 2 ounces finely grated Parmigiano-Reggiano
  • 2 small regular onions, chopped
  • 4 cloves garlic
  • 6 ounces cremini or white button mushrooms, sliced
  • 2 cups broccoli florets
  • 1 package wheat macaroni
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper


Cook macaroni as indicated on package. As the macaroni continues to cook, add broccoli florets towards the end. Let it cook for about 5 minutes. Drain both and set aside. Sauté onions with garlic. Add mushrooms and sauté until the water dries out. Transfer everything to a deep dish.

Add your cheeses. Mix well. Bake at 350 degrees until cheeses melt. Switch oven to high, broil for 15 minutes until cheeses roast to a golden color.

Serve hot with a hearty bread.
