Roasted Okra in Gram Flour
Pointer 1: Fresh okra are the best for any okra preparation.
Ingredients:
- 2 Tbsp. canola or olive oil
- 1 pound fresh small okra
- 1/2 cup gram flour
- 2 tsp. turmeric powder
- 1 medium onion diced
- 1 Tbsp. chillie red pepper
- 1 tsp. mustard seeds
- 1 cup fresh chopped coriander leaves
- water to mix in the flour
- salt to taste
Method:
Use a pan or wok^ to cook this recipe. In 1 Tbsp. oil add mustard seeds. Let it spurt. Add chopped onions and sauté onion until transparent. Add turmeric powder. Add okra and toast turning often. Continue for about 10 minutes.
Add chillie powder. Mix gram flour in water to the consistency of a batter. Add to the pan. Finally add salt. After 10 more minutes of sauteing, turn off heat. Sprinkle coriander leaves on top right before serving.
