Pasta in Tomato Sauce and Goat Cheese
Ingredients:
- 2 cups any kind of pasta
- 4 tomatoes cut
- 1 cup tomato sauce
- 1 cup Spinach
- 1 cup goat cheese
- 1 tsp. crushed red pepper
- 1/2 tsp. oregano
- 2 fresh basil leaves
- salt to taste
- 2 tbsps. olive oil
Method:
Cook pasta in water and a pinch of salt. Remove when they are half cooked. In a pan add olive oil and sauté the garlic until light brown. Blanche spinach for 5 minutes, then add to the sautéd garlic. Continue for another 2 mins.
Make sauce in pot by just adding the fresh tomatoes and the cup of sauce together. Add your crushed pepper, oregano and basil after the tomatoes cook and blend in with the sauce. Finally mix in the garlic spinach combo. Sprinkle some salt as the goat cheese will already have salt in it.
Pour the entire mix into a baking dish. Add the cup of goat cheese to cover the top of the dish. Bake at 375 for about 20 minutes. Serve with a side of hot french bread.
