Quinoa Pulav

Quinoa can be used in any type of preparation. Here is a simple pulav. I have subsituted Quinoa for Basmati Rice..

Pointer 1: You may use Quinoa as is in this preparation, or toast it dry for about five minutes, then begin the normal cooking process.
Pointer 2: Rinse Qunioa thoroughly. You may want to use a strainer and let the water run through for a few seconds.
Pointer 3: I have suggested a few vegetables, but you may add any number of vegetables such as peas, cauliflower, spinach. You may not want to add vegetables with a high water content.

Ingredients:

  • 1 cup Quinoa
  • 1 potato sliced thin
  • 1 carrot cut into thin slices
  • 8 to 10 regular green beans
  • 1 small onion cut into fine pieces
  • 3 to 4 cloves of garlic
  • 1 cup of shredded cabbage
  • 1 Tbsp. canola oil or olive oil
  • 1/2 tsp. turmeric^
  • 2 green chillies cut into fine pieces (you may choose to eliminate this)
  • A few coriander leaves, shredded
  • Salt to taste

Method:
A wok^ or a flat skillet will work for this. Heat the skillet on stove for a few seconds. Add oil. Then add the green chillies, saute for a couple seconds, add the garlic and the onions. Let it saute for about 5 minutes. After the onions turn translucent, add the vegetables. Turn them over a few times and let everything cook. You may add other vegetables that won't turn this soggy. When the vegetables are almost done, you may add the desired amount of salt. When done keep this aside. Remove from stove before well done if you like the vegetables a little crunchy.

Quinoa
Cook the Quinoa separately. For one cup of Quinoa, you would need to add 21/4 cups of water in a saucepan. Let the water boil first, then add the washed and rinsed Quinoa. Let the whole thing simmer for 5 minutes. Now turn the stove to low heat and cook like you would regular rice. After the Quinoa is cooked, you may transfer the whole thing to a wide dish. Add the vegetables and mix well so everything is blended well. Since we have already added salt to the vegetables, you may not need to add salt to Quinoa. But if needed, you may add a bit more salt to bring out the taste. Now finally add the coriander leaves and mix well. This pulav is good for two servings if used as a main dish.
