Tomato Onion Chutney

Pointer 1: Vine-ripened tomatoes or plum tomatoes are best for this chutney. Also, red onions with a kick of spice work well rather than bland white ones.

Ingredients:

  • 1 large onion diced
  • 4 large tomatoes sliced
  • 2 Tbps. chana dhal used for chutneys
  • 1 Tbps. shredded coconut
  • 1 tsp. tamarind concentrate
  • 4 dry red chillies
  • 2 Tbps. oil to sauté
  • Salt – to taste

Method:
Sauté red chillies in a heavy pan or wok until they turn to a dark brown colors. Add onions and continue until translucent. Add tomatoes and sauté for another 8 minutes.

Remove from pan. Let it cool for a few mintues. Add ingredients into a blender and grind to a paste. Add salt to taste. Serve with idli, dosai, or vadai. Great addtion to any meal.
