Vegetable and bean salad

Being vegetarian of course, we all eat a lot of salads. But they need to taste as appetizing as they look. Here is one such salad, loaded with vitamins and antioxidants.

Pointer 1: Prepare them with fresh ingredients.


  • 1 cup cooked green beans, just enough to make them crunch yet not raw
  • 1 cup cherry tomatoes
  • 1 - 2 vine tomatoes
  • 1/2 can of chick peas
  • 1/2 black-eyed peas
  • 1/2 pinto beans
  • 1 Tbsp. of red onions
  • 1/4 tsp of parsley
  • 1/2 Tbsp. crushed black pepper

May add the following as well:

  • 1 artichoke
  • 2-4 little radishes
  • 1/2 cup of fresh spinach of any kind


  • 1Tbsp. lemon juice
  • 2 Tbsp. olive oil
  • 1/2 tsp. honey
  • 1Tbsp. balsalmic vinegar
  • 1 Tbsp. mustard

Cut your vegetables in any shape you prefer. Toss them all together.

Cook green beans for about 8 minutes in boiling water. Just enough so there is no raw taste. Cut them in 1-inch length and add to the rest. Add the dressing right before you serve the salad.
