Goan vegetable curry

Goan Vegetable Curry


  • 1 pound mixed vegetables (potatoes, cauliflower, peas, beans)
  • 1 large onion, chopped
  • 1" ginger, diced
  • 2 green chillies, chopped
  • 3 pieces garlic, minced
  • 1 tsp. red chillie powder
  • 2 tsps. dried powder of coriander, cumin, turmeric, clove, cinnamon (garam masala)
  • 1 cup unsweetened coconut milk
  • 1 cup water
  • Oil to sauté 
  • 1/2 cup fresh coriander leaves, chopped
  • Salt to taste


Steam the vegetables until cooked but not mushy. Use a pan. Add 1 Tbsp. oil. Let it warm, then add the green chillies, onions, garlic and ginger. Sauté for about 5 minutes. Add the red chillie powder and masala. Mix and finally add the coconut milk aned water. Add salt. Cover and cook on medium heat for about 10 minutes. Garnish with the coriander.

Serve with Basmati rice or paratha.
