Millet & Quinoa Pongal

A tasty wholesome dish especially for diabetics. The recipe is the same as regular pongal. Just subsitute millet and quinoa for rice. No change is moong dhal quantitiy.

Ingredients:

Dry roast
Until ingredients are hot and you get the toasted aroma.

  • 1/2 cup quinoa
  • 1/2 cup millet
  • 2 Tbsps moong dhal

Pressure cook in cooker or Instant Pot (IP)

  • Millet, quinoa and lentil together

Add salt to taste. If you do not care for mushy consistency, lower the cooking time in Instant Pot and remove cooker from stov. if you favor the consistency similar to regular cooked rice. Let it cool and pressure be released naturally before opening the lid of either the cooker or the IP.

Roast in ghee & oil

  • 2 Tbsps. of peppercorn/black pepper
  • 2 tsps. cumin
  • 1" fresh ginger diced
  • 2 sprigs of curry leaves
  • Bits of cashew (optional)

Make a very coarse powder of the peppercorns and cumin. Mix the powder, ginger, curry leaves cashew with the cooked ingredients. Stir well, add dollop of ghee and serve hot with a side of Chutney or Gothsu.
