Mixed vegetables from Swamy's home
Pointer: Combination of vegetables. Mine has cabbage, green beans, carrots, spinach.
Ingredients:
- 1 cup pink dhal or masoor dhal
- 1 tsp. turmeric
- 2 tsps. saambar powder
- 1 Tbsp. dry home made fresh curry powder to enhance taste (mix of coriander seeds, dry red chillies and chana dhal, toasted and powdered)
- 1 tsp. canola oil
- 1 tsp. mustard seeds
- 1 tsp. asafoetida
- 2 tsps. urad dhal
- 1/2 sprig curry leaves
- Salt to taste
Method:
Cut vegetables to any desired shape and size. Cook dhal separately in a pot. When dhal is three-fourths done add all the vegetables to the same pot..
Add turmeric powder, asafoetida, saambar powder and the fresh curry powder. Add 2 tsps. salt. You may adjust salt later to suit taste.
Let vegetables cook. When done garnish with mustard seeds and urad dhal in the canola oil. Pour over cooked vegetables. Add fresh curry leaves. Serve with rice or chappathis.
