Oatmeal pancakes

Oats and almond meal pancakes


  • 1 cup quick oats/steel cut oats
  • 1/4 cup almond meal
  • 1 egg
  • 1/2 tsp. salt
  • 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 Tbsp. canola or olive oil
  • 2 tsps. white or brown sugar
  • 1 tsp. vanilla extract (optional)
  • Warm water to mix the dough


Powder the quick oats to a fine powder in a blender. Mix with almond meal flour. Beat egg and add to the flour. Mix other ingredients to form a batter. Adjust water as needed.

To enhance the taste, you may add some vanilla extract and sugar.

In a medium, non-stick griddle or pan over medium-high heat, scoop the batter and allow it to spread. Use canola oil to brown the pancakes on both side. Serve with fruits or maple syrup.
