Kothu Paratha

Ingredients:

  • 4 parathas made at home or bought at Indian grocery store
  • 1/2 tsp. mustard seeds
  • 4 green chlies
  • 2 cloves garlic, minced
  • 1/4" ginger minced
  • 1/2 a medium onion, chopped
  • 2 medium tomatoes
  • 1 tsp. garam masala
  • 1 tsp. red chili powder
  • 2 eggs
  • Salt to taste
  • 1 Tbsp. fresh coriander, chopped
  • 2 eggs

  • Method:

Cut or break parathas to tiny pieces and set aside. In a pan or wok, add oil and heat. When ready add the mustard seeds. Allow them to pop and immediately add the green chilies, garlic, ginger and onions. Cook for a couple minutes until onions turn translucent.

Add red chili powder and garam masala. Mix into the cooking ingredients. Add tomatoes and cook well, uncovered. Add the parathas and continue on medium heat. At this point add salt.

Finally, break the eggs and mix to scramble on pan. Or, beat eggs separately and pour over the mixture. Mix until moisture evaporates completely. Garnish with coriander leaves.

Serve with raita.
